Pumpkin spice & everything nice

Pumpkin spice is certainly the rage this season, in fact it seems to get bigger every year. It amazes me all the recipes and commercial food items that pop up with pumpkin spice each year. Halloween is Wednesday which means we say good-bye to October. The pumpkin patches will all be closing this week which always makes me sad but that doesn’t mean we can’t still enjoy pumpkin spice. I didn’t always like pumpkin as much as I do now.  Are you a fan of pumpkin? It is so healthy, the pumpkin health benefits are numerous. Lots of vitamin A, fiber and beta-carotene, so if haven’t added pumpkin to your autumn food list give it a try you might be surprised. It’s also great for dogs and happens to be a favorite of Bailey. I mix some in his meals and he is fast to eat every morsel.

I thought it would be nice to share a few of my favorite pumpkin spice recipes with you. Hopefully  you will enjoy making them and of course eating them!

My #1 all time FAVORITE pumpkin recipe is Pumpkin Streusel Coffee cake. I found this recipe last year on King Arthur Flour website. I have yet to have a guest not love it.  It’s worth every minute it takes to make.

 

 

 

 

 

 

Next would be Pumpkin Spice Latte Muffins  from Popsugar.com. I actually served these this morning, guests were asking for the recipe so they could make them at home. What more could I ask for! All you need is a pumpkin spice latte to go with your muffin.

 

 

 

 

 

 

 

Now if you have never tried pumpkin butter, what have you been waiting for? I prefer the healthy recipe and I play around with the spices since I love all the autumn spices, especially while they are cooking. This recipe is so easy you make it in a slow cooker, how easy is that!
